Blueberry Quinoa Pancakes

Ingredients

2 cups quinoa flour*

¾ cup almond milk*

¼ cup caster sugar

2 teaspoons baking powder

1 egg

Oil or coconut oil, for frying

Maple syrup and fresh blueberries, to serve

Method

1. In a large bowl combine all ingredients, except blueberries.Whisk until smooth. Foldthrough blueberries.

2. Heat oil in a large fry pan overmedium heat. Add ¼ cup ofmixture to the pan. Cook for 1-2 minutes on each side or until cooked and golden.

3. Serve topped with extra blueberries and maple syrup.
